Another in part of our series of beers focusing on the local products and the harvest season here in Cataluña is a DIPA that is brewed with a tasteful amount of wildflower honey from the apiary at the Finca Parrera natural winery about 45 minutes from the brewery. Contrary to what one might think, the honey addition is not to increase the sweetness of the beer as it is almost fully fermentable.
What it gives is a smoothening effect on the body of the beer as well as a deep, slightly earthy complexity that enhances the big, bright hoppy bouquet of the beer. Dry hopped with El Dorado, Cashmere, Citra Cryo and Galaxy the nose displays strong notes of peach ring jellies, pineapple, passion fruit and slight coconut.
